Is there any way in outlook (other than entering something as a reminder) to
have an email pop back up in your inbox at a later date? For example, I
frequently send emails and get a reply back that says "remind me again about
this in May". Is putting this as a task on "Reminders" the only way?

I may be dreaming, but it would sure be nice to be able to right-click and
say "resend this to me on XX date" or something like that.

You can flag the message for Follow up. You can freely type in "Flag to:"
field.
You can also already send the message and set a "do not deliver before..."
date. The message will then sit in your Outbox until that date.
