Recover data from different user account on same machine

Gurus, this is the situation:

An NT domain with a small number of users was scrapped and rebuilt as a
Server2k3 domain. The computers were manually joined to the new domain, but
one of the machines did not get a .pst made of the Outlook 2000 data
beforehand.

Is there any way to recover the data from the user's previous NT
folder/account, which still resides on the machine? Additionally, they are
now using Outlook 2003, for whatever it's worth...

Anyone with Administrator rights on that machine can search the hard drive
for *.pst, then copy or move the file as needed and import it int Outlook
2003. Be sure to search subfolders, hidden folders, and system folders.
