recording changes made by users

I know it's possible, but I can't seem to find any documentation on how to
create a table that automatically logs any changes that users make to the
data in the database, when they changed it, and what they changed.

Can anyone help me with this?

record level tracking
track changes
timestamps
etc.

There are many many posts out there on this topic.
