Reading pane options

Is there a setting that allows you to have the date and time stamp displayed
when viewing messages using the reading pane?

That's already show by default.
Verify you didn't turn off displaying the header information;
View-> Arrange By-> Custom...-> Other Settings-> untick: "Hide header
information"

I have that option set OK, so I can see it in the reading pane summary. I
guess what I meant was the actual message preview when I have a message
selected. It seems everything but the "Sent" details are displayed. I can
see To, From, Subject, Attachment info, etc., but not the date/time sent
information.

You won't see the time the message was sent (which could have been hours or
days ago), but the time it was received will be in the Received column above
the Reading Pane if you display the Reading Pane on the bottom instead of on
the right side. WIth the Reading Pane on the right side, it will be
displayed in the tooltip that appears if you hover the mouse over the
message in the message list to the left of the Reading Pane.

You won't see the time the message was sent (which could have been hours or
days ago), but the time it was received will be in the Received column above
