It says I have 31 emails in the inbox, however in the pane I can get only 1
opened email at a time. It was set to show 25 of the emails at a time once
then I could click the one I wanted to open. Not sure what or how the change
but sure would like it as before. Any help is allways appreciated.

Are you talking about the message list pane or the preview pane below it?
You can 'grab' the horizontal divider between those two and move it
where you like.

.
The window is large enough the email "opens" instead of "listing" them as it once did, before i would click on the email I wanted to read and have to use ctrl >
in order to get next one and it "opens" I would rather have the info so I
can click the one i want open or to read

It sounds like you don't want emails to open automatically in the
preview pane. To change that behavior, go to View, Layout, and
uncheck "Show preview pane."
