Read Receipt for Outlook emails

How do I set the read receipt tracking option, such that
the recipient does not know that I have enables that
option? The way it is set up now, the recipient gets a
message stating that I have requested a read receipt.

That behaviour is correct. Read receipts are handled by the receiver not the
sender. All that a sender can do is to request one. You could try a delivery
receipt these are controlled by the mailserver (if they support it).
