I have an older server that is running a software RAID with Windows 2000
server. I was wondering if I could take the 3 drives that are in it, all hot
swappable, and put them into a server that have bays free but has a hardware
RAID 5 configured now. I know that I can plug them in and configure the
partitions, but can I plug them in without any data loss from the previous
configuration?

As soon as RAID-controllers have chips from different manufacturers or
when internal settings or protocols differ data loss is likely to happen.

Don't take the chance, backup the data before migrating drives.
