I want to be able to merge a hyperlink and have the documen
automatically "alias" the hyperlink as "Click Here" or some such

What do you mean by "merge a hyperlink"? Regardless you can use a friendly
name like

=HYPERLINK("mailto:"&"(e-mail address removed)","Click Here")

where part to the left of the comma is the address (in this case an email)
and to the right
of the comma is the friendly name

When I am doing a mail merge in word I want to be able to have wha
shows up as a URL in the excel file I am merging to show up a
hyperlink saying "click here" or something like that in the wor
document

I would say that is more of a Word than Excel question and I'd suggest you
get a newsreader and connect to the word NGs. Having said that you can right
click a web address in Word and select edit hyperlink and then change the
name
of the link
