Is it possible to section a document / template into two or more sections, then protect one of the sections from edit (like cell protection in Excel) allowing the user to edit one section and not the other. (If this cannot be done in Word sections can it be done by protecting cells on a Word table

Yes you can do it by inserting a continuous section bream ("Insert",
"Break"). When done, click "Tools", "Protect document". You will get a
dialog box allowing you to "Protect for forms". Select which sections to
protect and which ones not to protect.
