I am looking for a means of "protecting" a signature inserted in a Word
Document or Excel sheet from being copied / pasted to another document.

Can't be done.

Even if you could protect the part of the document containing the signature,
someone could still do a print screen into MSPaintbrush and copy the
signature that way.

You can password a signature file so that only the intended person can
insert it into a letter or document, but once it's in there it's fair game
for all.

That's the security nightmare with digital signatures. If it's part of the
document and you can see it on screen then someone else can use it.

Any time you write your signature it can be copied and digitised. the
worrying thing is that some organisations - like banks - are prepared to
accept digital signatures, even faxes, as authorisation without any further
checks.
