know that they are defined all over the place.

There are many out there. Winpatrol is a decent one IMO and free of course.
What is it you want to do?

What's wrong with "msinfo32.exe" and "msconfig.exe"?

In particular I have what I think is a java-based program that starts when I
boot. I don't know when I ever installed it and want to find out what all
is starting so I can find that one.

If it shows ALL of the files, then nothing (but previous experience showed
that it missed some)

There are a variety. Here is one to look at, Autoruns from SysInternals.
