I've stupidly used the PCA in the wrong way. I'd assumed I needed to
'apply it' to the intallation package on the CD before running it,
which I did. Im wondering whether Vista will now treat any
installation from the CD as a Windows XP (SP2) app, as this is what I
applied?

Is there any way I can undo this policy?

Windows only applies these settings on that CD. You can still change it
however by opening the properties of the installer exe file, under the
Compatibility tab. In some cases you have to click on "Show settings for all
users" to change it.
