Can you set the affinity of a process before it is started? I have a game
that flickers due to (possibly - google research!) switching between cores,
but once the game is open, I can't alt-tab back to windows to set its
affinity.

Not without a third party utility... I beleive what you want is called
"Control CPU", or similar.

Try Ctrl-Alt-Del and start Task Manager from there to set
affinity. Also, you may be in full screen 3D. Try Alt-Enter
to switch to windowed mode.

If all else fails, you could start XP with a single core. Edit
boot.ini to insert a copy of your boot data line and append
/numproc=1 to the end. Rename the option to something
like Single CPU Start, then you can select single core when
you want to run the game. Reboot to normal start when
finished.

It's all explained here:

There are a few different small utilities that you can insert in a
shortcut, to force an application onto one core. I only selected
this one, because I read about it some time ago and remembered
the name - I've never tried it.

Tried all the 'special' keys I know of - the windows key, Alt-tab, Alt-Esc,
Ctr-Alt-Del - nothing cuts out of the game!
