When I reformat text in a word doc say to turn it bold or to center it, it
reformats the entire document. I undo the change and the document reverts to
the previous format but the text I formatted is now correct.

Turn off "automatically update" in the style definitions
(starting with the Normal style) as described in
http://word.mvps.org/FAQs/Formatting/WholeDocumentReformatted.htm .
