Printing "Insert Date" Field - Wit's End

I am having a weird problem in Word 2003 Sp1

It has to do with the Insert Date & Time option from the insert menu

It has to do with older documents saved with older dates (for example, a
document comes up with Nov 20, 2004)

When we go to print, it automatically inserts todays date. I doublechecked
the field to ensure "Update Automatically" was not checked off

As well, in the print options, I made sure that update fields options was
unselected as well.

It keeps changing the date to the current date!! I even copy the old word
doc text into a new one and it still happens. Even when you do a print
preview

Any suggestions please

You are using a DATE or TIME field rather than a CREATEDATE field. This
field should be put in the original template if possible.

In the document in question, press Alt-F9 to display field codes. Then
change the field to a CREATEDATE field, press F9 and then Alt-F9.

The "automatically update" box works only when the field is inserted. If it
is a Date or Time field it is set to automatically update.
