If there is color in the document, Print Preview will still display color.
My default printer is a monochrome laser, and I see color in all my
documents.

Try setting your default printer to one that doesn't print color - a
monochrome laser for example.

Is there a way to do a print preview of a document in black and white or
grayscale?
isn't grayscale standard? (not being rhetorical - I don't know the answer) if it is this site will give you an idea of how the image will look 100% online and takes a few seconds (just hit grayscale under effects)
