Is possible to restrict the access to the previous versions of the files to a
certain group of users?
Because of ease of access to this functionality, I wanted to allow the
access to the same only the administrators.

Uninstall the Volume Shadow Copy client from their workstations. Or, you can
disable the "restore" button. See

Personally, I want users to be able to open/copy files and not bug admins
for file restores. It's a relief that they can handle this themselves. The
"restore" button is too dangerous, though (esp on shared folders), so I like
disabling that.
