Preventing names of recepients being displayed

I am using Outlook 2003.
May I know how to prevent the names of recepients being displayed o
the *To :* section of the receipient mail ? Maybe can change them int
something like (e-mail address removed).

Put the addresses in the BCC (Blind Carbon Copy) field of the mail header.
If that field doesn't show while you're composing a E-mail go to the View
menu and select 'BCC Field'.

Alternately you could use an application like the ones listed here:
http://www.slipstick.com/addins/mail.htm#massmail
 
I'd try putting them in the Bcc field instead of the To field...
