Pivot table fields

Can I predetermine what order my pivot table fields results show up as
besides ascending or descending?

You can create a Custom List (Tools>Options, Custom Lists tab)
When you add a field to the pivot table, and sort in ascending or
descending order, the custom list takes precedence.
