Search your system for .pst files. If the data still exists, then it will be in one of those files, which you can open with the File | Open | Outlook Data File command in Outlook.
If you don't see any .pst files after you search, you may need to adjust the settings in Windows Explorer to show hidden and system files. Choose Tools | Folder Options, then switch to the View tab, and select "Show hidden files and folders."
