You can perform any calculation based on available fields in query of your
pivot table,I am calculating percentage like this
in design view go to last available column:
Filed = Percentage: ([Signed]/[Issued])
Total = Select "Expression" from the list
right click any where in the same column, Select "Properties"
Select "Percentage" from the list
