Outlook Profile Name

Every time I go into outlook it asks me which profile to
use i.e. Outlook and two other family names. I would
like to delete the two other names but don't know how to
do so. Any suggestions?

I would suggest you post your Outlook version.

In control panel, you can click the "Mail" icon. From there you can
configure/delete mail profiles.
