Outlook / Gmail, folders?

The only way to avoid all that is by setting up GMail as POP rather than
IMAP.

You don't. Outlook figures that you want to be able to see your gmail
messages. It therefore synchronizes the contents of the local folder cache
with the folders on the server.

have 1 inbox

"All Mail" is not an Inbox. it is a search context (of sorts) provided by
the gmail server that looks like another folder but contains a history of
all the messages that have been in the mailbox. Don't subscribe to it.
