Outlook archives, nothing happens. Emails that are two years old stay
in
folders like Deleted Items and Sent Items.
Archiving is based on the *modified* date, not the calendar date
(Received Date) normally displayed. You can add the Modified Date
column to the display. Moving an item to a different folder changes the
modified date, as does exercising a rule against it that moves the item
or otherwise affects it. If today, for example, you moved all your
6-month old e-mails (per their calendar date) into a different folder
then it would 6 months from today when those items get archived.
In Outlook's own help, search on "archive date" to see which date is
used when archiving different types of items. Also read

measured from when you last modified that item (viewing an item does not
change the modified date).
