Outlook Defaults in E-mail format

How do I change default paragraphing/line spacing in Outlook mail to single
rather than double spacing? I know how to change line spacing using Word as
my e-mail editor, but every time I compose a new e-mail I have to change it
again. How can I make "0 pts" before and after paragraphs be my default?
This is affecting my automatic signature, and that's a pain! Thanks for your
help.
