Outlook 2007 "From" and "To" fields drive me crazy!

Outlook 2007 "From" and "To" fields drive me crazy! Why do they always
change? One day I am in my Sent Item folder and the "To" field is showing,
then a few days later, "To" has disappeared and "From" is showing.

It is not just the Sent Item folder this happens it, it happens in other
custom folders. It always seems to be after I have done organizinf. For
example, making folders with Sent Items and filing my sent items.

How can I prevent this?

Sounds like you're accidentally choosing the wrong view. The default view
for ANY mail folder except the one specifically named "Sent Items" is the
Messages view. Even if the folders you create are subfolders of Sent Items,
the default view will be Messages. Only the Sent Items folder itself will
have the "Sent To" view as its default and it's not uncommon for someone to
accidentally change that view to Messages as well.
