All fields are visible on the All Field page. If you want to see them on other pages, you can customize the form the traditional way (see

I cannot duplicate your problem with Notes in the Phone List view or with modifying the notes in an existing contact. What operating system are you using -- Windows XP or Vista?
I'm using XP. It doesn't happen with editing newly created contacts,
but when editing old contacts created in previous versions.
You can certainly add the user fields to the Phone List or Address Cards view.
I was wondering whether the default contact display (when you open a
contact or import a VCF) could show the User Fields.
Yes I did add the Notes field to the Phone List view. I'm not using
AutoPreview.
Another thing I notice is if I modify a Note field (say add a space to
the beginning) and save the Contact, the entire Note field is empty
upon re-opening.
If Notes aren't working, is there a way to have User Fields 1 through 4
appear in the General Contact view?

Looks like the export and .vcf file problem may be a bug in the Beta 2 build.
It seems that whatever is entered in the Notes field of a Contact does
not show up in the Notes column of Phone List view, nor does it appear
in VCF exports or CSV exports.
