How do I remove the default calendar or at least change
the default calendar.

You can't remove the default calendar. To change the default Calendar (and
all the other default folders like Contacts, Tasks, Journal, Inbox, Outbox,
Sent Items, Delete Items, etc.), create a new PST and designate it as your
default delivery location.

Now, what are your _really_ asking?
