I understand that once a task has been assigned, it cannot be edited by the
assigner. Is it possible to attach information to that task once it is
already assigned?

Yes - you could open the Task and use the Send Status Report button.

I do have one other question though. Is there a way to associate the
information that I attached to the task within the task itself? For example:
I assigned the task to move a cabinet. I then took photos of which cabinet
and sent them via the "Send Status Report". Is there a way to click on that
task and be able to view those photos?

I believe that that is what the status report will do - the update will now
form part of the Task.

and sent it to him, I was unable to see this information as a part of the
task. Even when he responded to it, I could not view that info by clicking

You can insert a hyperlink to the file or a copy using Insert File.

I tried your previous tips, however, I was still unable to view this
information under my task. I assigned a task to a co-worker. The individual
accepted the task. This put a modifiable task in his box and an unmodifiable
task in my box. I sent him a hyperlink via the status report and he replied
to me. I can see in his task box that the status reports were there, but
nothing contained within those reports was visible. In my task box I still
only have the one unmodifiable task. My goal is for me to be able to click
