We are running Outlook 2003 in client environment with Word, Excel etc (all
other Outlook programs) 2000. There are some Outlook 2003 SP1 features that
we'd like to take advantage of. Does anyone know can Office 2003 SP1 be
safely / successfully applied in this environment?

Yes, but why SP1? Why not apply SP2 instead + additional updates instead?

Nope, just like for all software; make sure you test first. For Outlook this
more or less means to make sure that all add-ins and custom forms works
etc...
