On old PC, with outlook closed, locate and copy all *.pst files to memory
stick or other media.
Copy the files to Documents folder on new PC (if you used a cd, in explorer
ensure read only attribute is off)
Your old data file will probably be named outlook.pst - in any case it would
usually be the largest file

Start Outlook, File>Open>Personal Folders .........browse to and open your
old pst
Then if neccessary in Data Management set this data file as the default
store

You really shouldn't use Easy Transfer for Outlook. As you've already
reconfigured Outlook manually, all you have to do is transfer the data files
and reconnect them to Outlook.

The data files are called .pst. To reconnect them to Outlook use;
File-> Open-> Outlook Data File...
