Depends.

If you're on an Exchange server, you talk to your Exchange Admin and ask
them to restore your mailbox from the backup before they were deleted.

If you're not on an Exchange server, then you pull up the backup you've made
of your PST file that has the data in it.

I have a question that seems to be related. A customer of mine would like
to keep appoint information for about 3 years after the appointment, is
there a way to change Outlook's default? (either 30 or 60 days I think)

I'd recommend starting your own thread and including information like version
of Outlook and what type of mail server. Tho, my primary suggestion would
be 'turn off auto-archiving for the Calendar folder' without any other information
given.
