Out of Office Replies

We are on Exchange 2007 SP1 and Outlook 2007 and would like to set up a
server rule for someone who will be out of the office for several weeks and
wants all emails to receive an OOO message.

Is this possible, if so, how? Thank you in advance for your help.

Exchange limits the Out of Office reply to once per 24 hours per sending
address.
