When Minimise clicked on tool bar the Outlook closes.

Any ideas why or what to do to correct

Do you still see the Outlook icon in the right bottom corner (Notification
Area which you may need to expand when using Windows XP)?. Then Outlook
isn't closed.

It's not really closing, but minimizing to the system tray. Right-click on
the Outlook icon in the system tray and uncheck the "hide when minimized"
option.
