Once an item is sent should it go to outbox? mine doesn't. How would it show
up in Outbox. Do I have to change some settings. thank you.

A message only goes to the Outbox until it is sent, at which point it goes
to the Sent Items. By default Outlook is configured to send mail
automatically when connected to the network, so a message would only be in
your Outbox for a second or two (unless of course it had an attachment).
Once the server reports it has received the message successfully the message
moves to the Sent Items.

For example, if you disconnect your computer from the internet and compose a
message, when you send it you may receive a notification that the server
cannot be found. Closing out of that error you can go to your Outbox and
see the message there, waiting to be sent.

Once you connect to the internet and send/receive, the message will leave
the Outbox and move to your Sent Items folder.
