ol 2003 settings

How can I set this up so that it ALWAYS replies in HTML format with my
chosen font?
Sometimes I receive emails in ASCII and my reply automatically goes to text.

When I go to change the Format to HTML, Times New Roman is the font and I
prefer Arial.
Have made all these choices in Tools -> Options -> Mail Format tab.
The selections I've made to Message format and Stationary/Fonts lead me to
think that I should be getting the behaviour I expect. But then again, this
is a microsoft product.

Most people send plain text because they prefer it over html and it's rude
to change the format on a reply, except in a few circumstances where
switching to html allows you to better emphasize text or make tabular data
easier to read and you know the person uses an html capable mail client. You
should not convert it to html just because you like it better.

What font do you use for plain text? Which editor do you use? I know using
Word and Arial for plain text, it uses Arial if I convert to html.

Outlook doesn't have the capabilities to always convert to HTML - you'll
need to select it on each message that you want to convert to html.

As far as editor, I am just using OL. Prefer not to use Word for something
simple like email exchange.
