I'm using Powerpoint 2000 and I have a presentation with several embedded
objects - both word and adobe files - displayed as icons. When I'm working on
the presentation off my computer I can double-click on them to get to the
file, but when our web administrator put them up on our website (in slideshow
view only) only one of the objects (a word file) will open when you
double-click it. None of the others will work. Why will only one work? How
can I get them all to open up when double-clicked?

In Normal Edit mode try right-clicking the icon and selecting "Action
Settings". See what the "Object Action" setting is. My guess is it is not
set (which happens sometimes on Adobe files). Click the dropdown and select
"Edit" or "Open" depending on which file type you are trying to view. Also
click the "Highlight Click" checkbox at the bottom left.

Holler back if that does not work.

By "adobe files" do you mean PDFs?

If so, check the version of Reader on the machine where it fails to open.
Early releases of Acrobat Reader 7 had this problem.
Let Reader update itself and the problem goes away.
