so would i be better going down to 3800 but ipping the HD's to 200GB???

In my opinion, yes. Maybe some of the other guys here could offer an opinion.

although i play around with pics and home movies 160GB still seems massive!

It may do but you'd be surprised how quickly you'll fill that space.

i assume raid 1 is sensible? its primary a works pc for home office and cant afford downtime if a HD busts (do they ever bust?)

RAID 1, imo, is probably the best form of backup you can have, althouh a tad expensive, cos you have an equal size hard drive that will only ever be used for backup. It may never be used, but it's insurance.

And yes, hard drives die fairly regularly, sad to say.

last question! are vantage ok? or should i try elsewhere and shop around? as im not 100% sure what i need i like the "build it on the website" style of their site....otherwise i dont know what bit goes with what! any other good sites like that or are they as good as any other?

Sorry, haven't got a clue, have always built my own from seperates, as have most of the members here.

if your not sure about them look into pcspecialist.co.uk, they have some reasonable prices and use the same sort of system configuration page
