New custom dictionaries

I've got a word list I'd like to use as a custom dictionary for another
language. I can use it, but only for "All languages", English, French, or
Spanish. Can I choose another language from Word's list to apply it to?

I would imagine you probably have to have the proofing tools for that
language installed, and if you did, you would probably already have the
lexicon you're describing.

Are there proofing tools for all the languages listed in Word? Specifically,
the text is in Latin, and I didn't see that listed in the Office Proofing
Tools software. If not, is there a way to select another language while
removing the main dictionary and force it to only use the custom dictionary?
