Need scanning software to convert text documents to digital text documents

Hi, is there software (free or otherwise) that can take a scanned image
of a typed page and spit out a legitimate computer document that can be
edited?

In the past, I have used graphics programs to add or change scanned
content, but this is obviously a time-consuming PITA.

Are you trying to pull data off recognition zones? Like SSN, etc?
