If Excel recognizes your week end dates as dates, it converts the X axis
to a time scale axis. Given week-ending dates, Excel will use Days as
its base units, and it allows a space on the axis for each date. So six
of every seven dates have no column, but the remaining column is
constrained to fit within its date only. That's why it's so narrow.

To make it wider, change the X axis to a category axis. Right click the
chart, select Chart Options from the pop up menu, and on the Axes tab,
change the X axis from Automatic or Time Scale to Category.
