Names shown differently in From field

There is a lack of consistency in how names appear in the 'From' field, where
the identity of the same sender could be shown as Joe Smith, 'Joe Smith',
(e-mail address removed) or something else. When you sort by Sender, these then appear
in different places in the list, which makes it very difficult to find
communications with an individual.
It seems to occur whatever the listing is in the local Contacts directory,
and possibly relates to where the message originated, whether it is a reply
etc. Is there any way of rationalising this, eg by displaying and sorting on
the actual e-mail address rather than an attributed name?

It's also determined by the Sender, and no, you can't control that.
