My copy of Excel 2007 has lost the '/' date separator function, including the
'.' instead. How can I get the slash mark option back?

Select the cells to format
Right-click
Choose Format Cells
Choose Custom
Enter mm/dd/yyyy as the format...

The short date format setting is found in Windows Regional and Language
Options.

Make the change there.
