Multiple Selection under user-defined fields drop-down list

I can add user-defined fields, but the drop-down list only allows for one
choice from the list.

Any way to edit that list so I can choose more than one item? I know it's
technically possible, just doesn't seem to be turned on in BCM.

I am on 2007.
