Multiple archive folders?

I'm moving on to a new project and would like to take my current (default?)
archive_01.pst, rename it to Project_A, and then create a new archive folder
for Project_B (I'm guessing it's better to not let the one archive folder
grow too big and totally limitless - I'd rather have several smaller folders
than one big one, also just in case one of them gets corrupted etc).

What's the standard suggested practice here? do people use multiple archive
folder? how do you best go about setting up that 2nd archive folder?

Depends on your version of OL as to what too big consitutes.
Within OL ammend your archive settings to point to an Archive/name you wish
created
When its run an Archive of that name will be created.
Currently I have 6, year named archives open
