Moving user files (Roaming and or Special Files)

I have been testing this for some time now before putting any form of
strategy into live environment and have come up with some very strange
results.

First is there anyone who has worked a nice strategy for both onsite and
remote users?

I liked the idea of roaming user profiles, but found it reads well as most
white papers but in reality some what flawed itself on the first problem.
Especially when the roaming profiles are moved from one backup server to
another. The roaming profiles would continue to query the first backup
server. I chenged the location naturally to new location, but I noticed when
I took server A (original location) off line, instead of looking for Server
B (new profile location) the user profile search was continously going back
to server A. I looked everywhere for a file that maybe during installation
needed the profile from Server A. I thought ok DELETE, so I deleted
everything apart from the data in AD, but again on logon it wanted something
from Server A. I wasn't even sure if it was the roaming profile or the
special folders re-direct causing the problem.

Anyone with an idea as to how to move these very important files over? I, as
mentioned am only playing, but if this had been live, man I would have had
problems.

The main problem occurred after Server A for some unknown dns reason couldnt
be found and in the mean time the profile saved itself locally on all the
pc's the users logged onto. Hind sight I should have set the profiles to
*.man and then they would have just used default profiles until server A was
sorted.

I moved the profiles and special folders to 2nd backup, server C and this is
when I noticed it was as easy as One hoped.

Please don't refer me to whitepapers as I have read enough, anyone with
hands on would be great. Thanks in advance!!!

P.S. What is my aim, well to have all profiles and special files central for
backup and anti virus checking etc etc. So would be great to know how anyone
really got this working well.

What about setting the profile location on DFS?
What about using shadowing?

Any ideas and experiences would be nice!!!!
