Monitor Internet Activity

We have a small medical group of 500 Windows 2000
Workstations. What is the easiest way to extract Internet
Activity without visiting the workstation or alerting the
user? We would like to review a user's Internet activity
randomly. How is this info catured? In a log file? Is
there a command line option?
