I have seen this same issue on two XP SP 3 systems. In both cases the users
who suffered from lost My Documents shortcuts in the My Computer window were
limited users, not admins. I spent hours googling for solutions, but found
none that worked for those systems. Some people have had success with
checking the registry for this key:

HKLM\SOFTWARE\Microsoft\Windows\CurrentVersion\Explorer\DocFolderPaths

And making sure that key has subkeys for the users that are suffering from
this problem, with the correct path to their My Documents folder. For
example, if you have a user account Mike that can't see his My Documents link
in the My Computer window, and his My Documents folder is really located in
C:\Documents and Settings\Mike\My Documents, you have to check that
DocFolderPaths key to make sure it has a subkey named Mike that has a data
value of "C:\Documents and Settings\Mike\My Documents". If it doesn't exist,
create it, and see if that works. Didn't work for me, since those values
already existed.
