Message Rules

I have multiple email adddresses setup in Windows Mail and have setup rules
so the incoming messages go to specific folders. Is it possible to assisgn
rules to 'sent' messages as well so they don't all go to the sent folder?

No, but you could apply such a rule manually to Sent Items folder.
