Menus become invisible

Hi Folks,
I have a strange problem that began occuring after I
updated windows 2000->Win XP Pro. What happens is I boot
normally (no errors) and then I can do whatever I need to
do (open programs, etc.). After some period of time or
some event (both unknown what the moment is) all my drop
down menus become empty, but the menu outline is visible.
So for example, I'll open "Applications" off the start
menu, and the application menu will open and I'll see the
outline of the menu box for the applications, but there is
nothing in it. If I move the mouse around in the
application menu, you can see sub menus open with the same
behavior. The same thing applies to menus in programs
such as Excel, Outlook, etc. The only way to fix the
problem is rebooting. After I reboot, the problem occurs
again after some unknow point or moment in time.

I've reinstalled windows and office and the same thing
keeps happening! Has anyone experienced this?
 
This may help, I was going to suggest reinstalling or upgrading graphics
drivers. Below is copied from an MS Q.

Changing the Language of Menus and Dialog Boxes
Changing the language used in menus and dialog boxes may not work with all
display adapters. If you see blank menus or dialog boxes after changing the
language, there are two options:
Change the resolution of your display adapter.
Upgrade the driver for your display adapter to a newer version. Contact the
manufacturer of your display adapter for information on updated drivers.
